Avocadoes are widely used in raw cuisine. They are wonderfully creamy in smoothies, filling when wrapped in sushi nori and super convenient to take with you in a packed lunch. Spain is a major producer of avocado, the mediterranean coast enjoying the specific climate and soil conditions demanded by this plant. Avocadoes only begin to soften once they are picked, so if you have trouble selecting avocadoes, go for the harder ones, with no soft spots, then ripen in a paper bag. For a ready-to-eat avocado, the best place to test is with a gentle thumb squeeze on the narrow end of the fruit.
